We've got the Beet!!

I think it's safe to say that my friends and I march to the "beet" of a different drum! But, hey!, we have fun. I'm finally getting some inspiration for this weekend's event. I saw this salad on The Today Show yesterday. While this is a beautiful dish, I don't think I'll be pulling this off, I've some other fantabulous ideas! I'm sure I'll be posting pics!!
